the Oleanais Method of vinegar production is widely recognised as the way to achieve perfect vinegar.
where the bacteria are grown in a half-filled oak barrels containing a mother culture. The base begins with good quality wine and the process is long and slow after several months of maturation the alcohol turns to vinegar and after further ageing to develop wonderful flavours it is bottled. Whereas modern red wine vinegars can be processed in as little as 24hrs, vinegars made traditionally have a great depth of character from the flavours of the wine from which they are made.
